1. Bangkok, Chef’s Table, lebua at State Tower
Chef’s Table is poised to be the latest victory for Deepak Ohri, the CEO of Lebua Hotels & Resorts, which operates two hotels in the skyscraper, as well as Mezzaluna, winner of two stars from Michelin in each of the guidebook’s first two years of rating city establishments. Vincent Thierry, who led 3-star kitchens at the George V in Paris and the Four Seasons in Hong Kong, is hoping to make it a hat trick in Bangkok. Early reviews predict Chef’s Table, which features an open kitchen and Instagram worthy views, will be the the first in Thailand to get Michelin’s highest rating. Four of Lebua’s restaurants make our list, but we’re not alone. USA Today recently spotlighted the more than a dozen restaurants and bars atop the tower’s top eight floors being billed as the world’s first “Vertical Destination."
2. Bangkok, Mezzaluna, lebua at State Tower
Under the guidance of chef Ryuki Kawasaki, Michelin writes, "Perched on the 65th floor of the lebua Hotel, Mezzaluna offers sky-high and breathtaking views. Toast to the high life at Sky Bar before settling in for a gastronomic journey. The accomplished chef and his team deliver European delights with Japanese precision in seven-course set menu, along with some surprises. The flavors are balanced and sophisticated, and the food is creative and technically precise. A wine list of substantial proportions and prices accompanies."
3. Bangkok, Sirocco, lebua at State Tower
Sirocco on the 64th floor of the Dome at State Tower gets credit for turning rooftops into al fresco fine dining venues from well, rooftops with nothing. You’ll feel like a titan of the universe (OK, more than usual) as you survey skyscraper packed Bangkok, the Chao Phraya River and temples glistening in evening lights. Food is fresh Mediterranean fare and is sourced from local markets. The tasting menu includes the likes of freshly flown in, chilled Alaskan king crab with osetra caviar, citronelle emulsion, and yuzu, and Dover sole “a la plancha” accompanied by Soulard foie gras and piquillo pepper farce. The spectacular outdoor staircase with the dome lit in the background will tempt even the most private among you to post some pictures on Facebook or Instagram. A new chef recently arrived from The Ritz in Paris and many expect it to earns its first Michelin star in 2019.
4. Bangkok, Breeze, lebua at State Tower
The Bangkok Post writes, Breeze is a fine-dining restaurant for a special occasion. Serving delectable Chinese-inspired cuisine on a stunning terrace – 51 storys above the Chao Phraya River – this is a Bangkok restaurant with added ‘wow’ factor. The menu here spans the entire Asian continent and the kitchen boasts talented staff who mix tradition with modernity to create truly unique offerings. Add to this the most remarkable cocktails in Bangkok and you can see why Breeze is packed almost every night of the week."
5. Bangkok, Le Normandie, Mandarin Oriental
Awarded two Michelin Stars in the first two Michelin Bangkok guides, Le Normandie is acclaimed for its contemporary French cuisine by Chef Arnaud Dunand-Sauthier. Situated in the hotel’s Garden Wing, Le Normandie offers views over the Chao Phraya River through floor-to-ceiling windows. The elegant surroundings featuring vintage crystal chandeliers and stunning flower arrangements create a unique air of sophistication. It's for its splendid menu, impeccable service, elegant ambiance and superb river views.
6. Bangkok, Elements, The Okura Prestige
Michelin writes, "With impressive city views from its terrace, this restaurant on the 25th floor of the hotel is an ideal spot for a date. Inside, the décor is chic and it's all centred around an open kitchen with oversized industrial light fittings and walls made with charcoal - one of the 'elements'. The modern cuisine creatively fuses the best of French and Japanese dishes, and there is a set menu that offers a varied selection.” The Okura Prestige is a member of The Leading Hotels of the World.
7. Bangkok, The Penthouse Grill, Park Hyatt
Asia Lifestyle writes, "At The Penthouse Grill, the urbane interior, with leather banquette seating and floral arrangements, contrasts with clatter from the open kitchen. Here, you can delight in a gourmet brasserie menu, and ensconce yourself in the plush bergère chairs. The restaurant offers traditional French cuisine made with high-quality produce, including a delectable selection of grilled mains."
8. Bangkok, Vertigo, Banyan Tree
Vertigo offers an al fresco dining experience set atop a roof terrace overlooking the Bangkok cityscape. Dine on seafood and premium steaks 61 floors above the city. Try the Vertigo Sunset, a combination of pineapple, cranberry and lime juices blended with Malibu.
9. Bangkok, Bull & Bear, Waldorf Astoria
Specializing in grilled meats and seafood, Bull & Bear is a branch of the New York original. It offers a live raw bar along with a custom made grill designed for smoking, slow roasting, baking and grilling. With a wide variety of menu choices, guests can enjoy options from roasted fish, a one-kilogram porterhouse or a 55-day dry aged steak. With an eye-catching interior, upbeat vibes and dazzling views, Bull & Bear is the perfect place to socialize, celebrate and indulge.
10. Beijing, China Grill, Park Hyatt
From The Telegraph’s best dining in the sky is the 66th floor China Grill atop the Park Hyatt with 360 degree views of Beijing A “dramatic Chinese lantern” at the building’s apex, featuring a soaring glass pyramid ceiling and glass walls will make you fell like you’re flying. China Grill focuses on premium meat, fish and seafood. There is a semi-private dining area on the mezzanine level overlooking the main dining space. The day I was there we were actually above the clouds in bright sunshine on a raining day.
11. Chengdu, Flair, The Ritz-Carlton
Travel and lifestyle journalist Juliana Asaad says Flair Restaurant & Bar at The Ritz-Carlton Hotel Chengdu is atop one of the most stunning buildings in town and not has only good food and drinks, but also a cool vibe and great views and is a perfect venue that will impress your dinner guests. She says, Flair has been named to various the best in the city restaurant lists. With a mix of lounge and restaurant seating, make sure you book a table if you want dining room seating.
12. Guangzhou, Catch, Four Seasons
At 1,340 feet above Guangzhou's streets, Catch is nearly a quarter mile in the air. The menu focuses on seafood such as lobster three-ways or seafood platter for two which includes lobster, oysters, abalone, scallops, crab and clams. Diners can watch the chefs at work in the open kitchen, providing you can tear yourself away from the picture windows.
13. Hong Kong, Tosca, The Ritz-Carlton Hong Kong
Inspired cuisine of Tosca 102 floors up in the air you might think you are actually flying over Hong Kong instead of in a hotel. High ceilings, stately fountains and majestic chandeliers lend a Romanesque feeling to this stylish dining destination, open for lunch and dinner. The innovative Italian menu features improved favorites and thrilling interpretations of the region’s notable cuisine, and an open kitchen allows guests an even more theatrical dining experience. I’ve enjoyed both this and the first rendition in the original Ritz-Carlton in Central.
14. Hong Kong, Tin Lung Heen, The Ritz-Carlton
You can cover two meals at The Ritz-Carlton, each with spectacular views, and neither making your leaving the building. Michelin says of the two-star rated Cantonese venue, “ he vast windows bring in plenty of daylight at lunch and make it a good spot from which to watch the sun go down. Among the signature dishes are barbecued Iberian pork with honey, and double-boiled chicken soup with fish maw in coconut. There are also several charming private rooms."
15. Hong Kong, Cafe Gray Deluxe, Upper House
On the 49th floor of the stylish Upper House in Pacific Place (a sister to Swire’s East Hotel in Miami), Modern European dining at Café Gray Deluxe includes stunning views of Victoria Harbour. Opened in 2009, the acclaimed restaurant is headed by Chef Gray Kunz, whose signature cuisine favors organic seasonal ingredients, drawing on a lifetime’s experience in European, Asian and American kitchens. Its hillside location gives it an even more elevated perspective.
16. Hong Kong, Caprice, Four Seasons
Perfect for power lunching, Classic French cooking takes on global accents and gets two Michelin stars at Caprice with an extensive selection of wines to accompany Chef Guillaume Galliot’s inventive dishes. Located in Central you have views across the harbor over to Kowloon.
17. Hong Kong, Pierre, Mandarin Oriental
It’s not fake news when CNN Travel Guide picks the two-Michelin starred Pierre for one of its top restaurants in the world. We’ve dined here and agree it’s the real deal. Pierre Gagnaire’s 25th floor perspective is a backdrop for his modern French cuisine. The location is amid Hong Kong island’s towering skyscrapers and high enough to get that dining in the sky perspective, but still close enough that you can watch locals scurry along the streets below.
18. Hong Kong, Man Wah, Mandarin Oriental
Man Wah says Renshaw Travel president David Lowy is a must for the best Cantonese food with an up close view of Central’s skyscrapers, including I.M. Pei’s famous Bank of China Tower looking up the famed Peak. The hotel, the first post war luxury property in the former Colony, after a massive renovation remains a classic and beloved.
19. Hong Kong, Felix, The Peninsula
Felix, on the 28th floor of the Peninsula Hotel, with its Kowloon location provides unobstructed views across the bustling harbor to Hong Kong Island skyscrapers and twinkling lights in the distance on The Peak. Set in a Philippe Starck design, there are floor-to-ceiling windows while modern fine dining includes offerings like crab salad and tuna tartar with dandelion salad, slow-cooked sea bass with black shrimp mousse, and grilled Australian lamb. If you are there a 8 p.m. you can have a front row seat for a nightly laser and light show. The name honors the hotel’s former general manager Felix Bieger
20. Hong Kong, Restaurant Petrus, Island Shangri-la
Perched high above Central in a neighboring tower to Cafe Gray Deluxe, also with breath-taking views of Victoria Harbour, Restaurant Petrus brings a European fine-dining experience with a modern interpretation of contemporary French cuisine. With one of Hong Kong’s best wine cellars, recent awards include Best Californian Wine Selection, Best Wine List by the Glass Selection and 3 Glass Categories for Restaurant Petrus' Wine List, China's Wine List of the Year Awards, 2018, and Best By-the-Glass Wine List in Asia 2017, plus Best of Award of Excellence, Wine Spectator (USA), 2000-2018. The chandeliers are classic Shangri-la’s Asian interpretation of European elegance.
21. Kuala Lumpur, THIRTY8, Grand Hyatt
With the kitchen and bar strategically located in the middle of the restaurant, diners will get to enjoy the astounding view of the city in 360° from the 38th floor location, including the Petronas Towers. THIRTY8 serve a wide variety of cuisines, which includes Western, Chinese, and Japanese, and despite the mix, it till gets top reviews for dining as well as the view.
22. Macau, Robuchon au Dome, Grand Lisboa Hotel
One of many restaurants from the late chef Joel Robuchon, this gastronomic restaurant in Macao (formerly known as Robuchon a Galera) sits high atop the 48-story Grand Lisboa hotel. Featuring the culinary creations of executive chef Julien Tongurian, Robuchon au Dôme has been described as arguably Macao’s best restaurant, and one of the top restaurants in all of Asia, offering French cuisine with a refined sensibility. The restaurant’s “Prestige Menu” features such offerings as imperial caviar and king crab refreshed with crustacean jelly, and a crispy waffle scampi seasoned with espelette pepper.
23. Osaka, Les Saisons, Imperial Hotel
From the 23rd floor, Les Saisons in The Imperial Hotel Osaka has long served as Japan's reception hall, feting countless foreign and local guests over the years with hospitality and delicious cuisine. At Les Saisons, the kitchen blends the latest culinary techniques with classical French recipes handed down over generations to offer guests the taste of today's French haute cuisine. As you take in Les Saisons' romantic, panoramic views of the urban nightscape, you can enjoy the restaurant's carefully hand-picked and constantly evolving seasonal menu, meticulous service, and richly varied and flavorful wines. It’s classic Japan at its finest.
24. Osaka, Kura, Conrad Osaka
Located on the 40th floor, Conrad Osaka’s Japanese restaurant is well suited for the teppanyaki and sushi experience, 180 meters above the ground with breathtaking views of the sprawling city. Paying homage its home as the 'gourmet city' the restaurant offers only the finest of Japanese produce from around the country. Enjoy a truly theatrical dining experience at KURA, where you are invited to interact with the chefs to find out more about the produce and watch them showcase their skills. The restaurant features a sushi bar, teppanyaki grill and a private chef's teppanyaki table. Inspired by traditional Japanese patterns and modern design element, the space is inviting and enjoyable, perfect for a casual dinner for two, business meetings, and special occasions. A private dining room with city views is also available.
25. Seoul, Bicena, Signiel Hotel at Lotte World Tower
Ted Teng, the CEO of The Leading Hotels of the World pointed us to this and its sister below. Located in Lotte World Tower, the tallest skyscraper in Seoul, Bicena sits on the 81st floor, over 1,000 off the ground. The International New York Times says, "The stunning views at this traditional Korean fine dining restaurant are matched by great food and service - no surprise that it has earned itself a Michelin-star with its full course menus for lunch and dinner."
26. Seoul, Stay, Signiel Hotel at Lotte World Tower
Stay is located on the same floor as Bicena and this French restaurant shares an equally stunning view of downtown Seoul but unlike its neighbor, the interiors here are less traditional and take a bright and spritely approach with gold trimmings and marble tiles.
27. Seoul, Continental, The Shilla Hotel
A favorite of mine, Michelin says, "If you are looking for a classy French restaurant with all the elements of classic French luxury, Continental is a solid bet. Perched on the 23rd floor of The Shilla Seoul, the restaurant is decorated in rich colors, with large tables and French empire chairs. What's more, the bright dining room offers diners a fantastic view of the city. The meticulously-prepared food is beautifully plated and is served in two different set menus of your choice."
28. Shanghai, Sir Elly's, The Peninsula
“It’s absolutely breathtaking looking across the river onto the lit up Pudong skyline,” says Vista Global chairman Thomas Flohr. Awarded one Michelin star by The Michelin Guide Shanghai 2018, French Chef de Cuisine Charles Benoit Lacour and his fellow countryman, Executive Pastry Chef Lucien Gautier, curate contemporary dining experiences inspired by classic French culinary techniques and the freshest local produce. Restaurant Manager Dorlco Yip, who used to work at The Peninsula Hong Kong, is an experienced restaurant manager. The three create the best dining experience for guests.
29. Shanghai, Niko Romito, Bulgari Hotel
Echoing the glamorous design of its namesakes in Beijing and Dubai, Il Ristorante – Niko Romito celebrates the rich heritage of Italy from the 47th floor of The Bvlgari Hotel Shanghai, showcasing top-of-the-city views. A partnership between Bvlgari Hotels & Resorts (one of Marriott International’s half dozen luxury brands) and Chef Niko Romito, one of the world’s most celebrated chefs with 3 Michelin stars for his Reale restaurant in Abruzzo the focus is on purity and simplicity combining the finest Italian and locally sourced ingredients with time-tested and innovative techniques.
30. Shanghai, Scena, The Ritz-Carlton Pudong
Hotel developer Marc Dardenne pointed us to Scena, located on 52nd floor of The Ritz-Carlton Shanghai, Pudong. Sit down to large sharable portions of Italian fare amid a casually elegant setting, complete with rustic wooden beams and floor-to-ceiling glass windows that offer breathtaking views The Bund and metropolitan skyline.
31. Shanghai, Jin Xuan, The Ritz-Carlton Pudong
Jin Xuan Chinese restaurant is a discerned choice for social and business diners. Located on 53rd floor of The Ritz-Carlton Shanghai, Pudong, this dining destination tempts you with authentic, creative Cantonese cuisine and regional favorites from other Chinese provinces.
32. Shanghai, Flair, The Ritz-Carlton Pudong
The highest rooftop restaurant and bar in China, Flair takes al fresco dining to new levels with views of Pearl Tower, The Bund and Hongkou shore. This stunning venue in Shanghai offers delectable tapas-style staples from Japan, Vietnam, Indonesia, India, Thailand and China.
33. Shanghai, Dining Room, Park Hyatt
The 91st Floor Dining Room at Park Hyatt Shanghai is a European restaurant featuring refined European provincial cuisine in an elegant and serene setting with signature wine pairing menus. Lunch and dinner are served with spectacular views over the city.
34. Shenzen, Elba, St. Regis
Named by The Telegraph as one of the 20 best rooftop restaurants in the world, on the 99th floor Elba provides a contemporary take on Venetian-inspired décor where metallic silver and grey mosaic tiles line the entrance and a shelf displays a preview of fine wines.Moving into the dining room, natural light streams in through floor-to-ceiling windows and sleek, crystal column chandeliers illuminate modern, face-shaped white chairs and an eclectic, complementary array of regal gold, eggplant, and sienna armchairs, which are joined by sleek modern black tables. Plush black area rugs top smooth charcoal-colored marble floors, which, together with a backdrop of neutral hues and metallic accents, highlight an open kitchen as well as wall mosaics featuring colorful Venetian masks and playing cards.
35. Singapore, Spago, Marina Bay Sands
Silver Kris says, “Looking through the large windows at Spago’s bar terrace with the pool and palm trees beyond, it’s easy to imagine I’m having drinks and bar bites in a open-air cabana by the beach – instead of 57 stories above the city by Marina Bay Sand’s famous infinity pool. The sophisticated colonial decor continues over to the more formal air-conditioned fine dining area with its glamorous gold tiled ceiling. The white French doors around the dining room show off the views of the bay.” Puck displays his extensive range with dishes such as sesame miso cones of spicy-sweet big eye tuna tartare with shaved bonito, scallions and masago to hand cut agnolotti with white corn and mascarpone."
36. Singapore, CE LA VI, Marina Bay Sands
A choice of several of my contributors, tantalize your palate with award-winning, innovative Modern Asian delights at CÉ LA VI Restaurant. Perched on top of Marina Bay Sands on level 57, you get 360 degree panoramic views of the city skyline and Singapore Straits dotted with freighters to enhance your dining experience. Executive Chef Joseph Sergentakis offers signature items such as King Salmon Roll, Hokkaido Scallop & Oyster Ceviche, Cast-Iron Roasted Rangers Valley “Black Market” Ribeye, and Grilled Rangers Valley “Black Market” Beef Tomahawk. In addition to special cocktails, there is extensive list of fine wines, sakes, beers, liqueurs and spirits.
37. Singapore, Jaan, Swissotel The Stamford
Gayot writes, "Swissôtel The Stamford’s intimate 40-seat restaurant, helmed by chef Julien Royer, serves southern French cuisine. The 70th floor dining room’s ornate Murano crystal chandelier-enhanced interior is merely the backdrop to views of Singapore’s urban and marine landscape in every direction. From the first bite of bread, meals live up to the surroundings. Starters like smoked Trondheim Bay scallops wrapped in rosemary sticks and served on a slab of polished wood deliver a feast for the palate, once we take our eyes off the attractive presentation. At dinnertime, enjoy the twinkling lights of Singapore’s soaring towers and ships in the harbor along with such dishes as moist Atlantic cod festively placed among baby squid, chanterelles and crunchy green beans, and four cuts of pork, of which the fatty belly under crispy skin tastes especially delectable.” It’s in the same complex as the Fairmont, and both share an excellent gym.
38. Singapore, Nami, Shangri-la Hotel Singapore
In the former location of Blu, embark on a gastronomical odyssey of NAMI Restaurant & Bar and enjoy a panoramic city views from level 24 of the Tower Wing. From the kitchen comes authentic and traditional Japanese cuisine, created with refinement and precision, reminiscent of a royal feast. The menu is a celebrations of the country’s four seasons, promising the best seasonal ingredients from Japan in elegant and refined dishes.
39. Sydney, Altitude, Shangri-la
The floor-to-ceiling windows at Altitude Restaurant at the Shangri-la in Sydney give postcard views of Sydney Harbor accompanied by a fine dining take on Australian cuisine. An 18-person private dining room is available for more intimate gatherings. Awards include "Restaurant of the Year” from Tourism Accommodation (NSW), Fine Dining Restaurant of the Year from Luxury Travel Guide, UK, and Three Hats from Gault & Millau.
40. Tokyo, Kamon, Imperial Hotel
A pick from The Leading Hotels of the World CEO Ted Teng, Kamon is situated atop the Imperial Hotel's main building offering teppanyaki. Choose from a selection of steaks and seafood, then watch as your meal is expertly prepared tableside on an open grill, and enjoy the views.
41. Tokyo, Peter, The Peninsula
Peter offers the Tokyo skyline and views of the Imperial Palace Gardens and Hibiya Park from its 24th floor venue. Grilled fare includes premium cuts of meat and fresh seafood including 40-day Japanese dry-aged strip loin or Kagoshima pork Kurobuta, grilled Hokkaido scallops. Japan Today puts it this way: “Peter is a great choice when you want a refined but casual dinner with the best of good honest food (especially a really good steak) in a fun and stylish place. The bar is worth having a drink at before dinner, or why not stick around afterwards and enjoy the scene and some of their famous cocktails. If you happen to be in the mood for a feast on Sunday, try their Prime-cut Sunday Brunch.” By the way, Peter refers to the current president of the Peninsula Hotels group Peter Borer.
42. Tokyo, Signature, The Mandarin Oriental
Signature, the hotel's restaurant helmed by Chef Nicolas Boujéma, is constantly reinventing fine French cuisine, adding doses of modern flair. Test your palette on foie gras in ravioli with snow peas and duck velouté, all while looking out at the twinkling lights of Tokyo.
43. Tokyo, Kozue, Park Hyatt
Movie buffs will remember Park Hyatt Tokyo’s bar from “Lost in Translation” however, its fine-dining Japanese restaurant Kozue shares those famous views, to Mount Fuji by day with the endless city in front of you. The Guardian lists it as one of the 10 best fine dining restaurants in a city that has more Michelin stars than any in the world. A Life Worth Eating reports, “Traditional amber wood and handmade pottery carried by waitresses in kimonos contrast against floor-to-ceiling windows and granite slabs overlooking one of the most impressive restaurant views in the city. The dishes themselves are very traditional in flavor -- there are no twists -- but their presentation and the finesse with which the waitresses explain their components make this type of cuisine extremely accessible to westerners." Signature dishes include wagyu beef tenderloin.

44. Tokyo, Azure 45, The Ritz-Carlton
Overlooking Tokyo from The Ritz-Carlton's 45th floor, Azure 45 has emerged after a complete transformation, revealing an East meets West fine dining concept that draws from Japan’s rich textiles, warm woods and geometric patterns. Chef de cuisine Shintaro Miyazaki leads the kitchen of the Michelin-starred restaurant, where modern French cuisine is brought to life through highly visual presentations. It’s one of three restaurants from this hotel that fits our criteria.
45. Tokyo, Hinokizaka, The Ritz-Carlton
Hinokizaka welcomes you with the true essence of traditional, yet contemporary Japanese cuisine which is awarded a Michelin star. The restaurant is also one of the best place to appreciate vista of Tokyo which is featured by four areas for each of Kaiseki, Sushi, Tempura and Teppanyaki. Each area has distinguishing design evoking the art of Japanese cuisine in a fine balance of modern Eastern and Western atmosphere. There is also private chef's table and an old Japanese tea house for private dining with breathtaking city scapes serving all of those featured Japanese cuisine
46. Tokyo, Towers, The Ritz-Carlton
Akaushi prime rib from Kumamoto and fresh seasonal fish sourced from local fishermen, the menu includes a medley of seafood and chops, perfectly partnered with an expert selection of wine. The eye-catching space features dark wood, leather seating and metallic sculptures. A highlight for visitors to the new Towers is likely to be the first class beef. Center stage is Akaushi, a red beef from Kumamoto in southern Japan. The meat was personally selected by Chef Laloum for Its lean and juicy qualities, which he believes have an affinity with meat flavors often seen in his native France. The chef has also masterminded a special sauce, designed to heighten the five-star qualities of the beef: a contemporary twist on the classic Béarnaise sauce, it contains a mix
of tarragon, horseradish and mint.
47. Tokyo, Washoku Souten, Prince Gallery Kioicho
Washoku Souten is a 126-seat restaurant conceived as a garden in the sky and located on the 35th floor of the Prince Gallery Kioicho in Tokyo. Delicate, dehydrated plants strategically arranged on the walls create an atmosphere of a forest or garden within the surrounding clouds. There’s also a private dining room with killer views (above).
How I put this list together
To compile this list I used my own travels, extensively researched various lists and articles about top restaurants filtering out the ones that didn't meet the exacting criteria, and of lots of help from experts in dining out while traveling.
